About Quarry
Owned and operated by the brother and sister team of David and Naomi Wyse, quarry bistro & winebar is named in the spirit of Canmore's mining history (and after local favorite watering hole, Quarry Lake). Combined, the two siblings have spent over 30 years in restaurants nourishing their love of food, wine, soft music and good company. The bistro is the expression of a long held dream to have a little place of their own in the heart of this mountain community. The professional staff and welcoming atmosphere of quarry will make you feel at home.
Atmosphere
Located on the sunny side of Main Street, the bistro features a pretty patio and an interior décor that is both contemporary and comfortable. The room is bright and airy, with open beam construction, skylights and windows that look out to the sidewalk and the mountain views beyond. Warm wood and soft upholstry accent the dining room, centred around the bar and its windows into the kitchen, which provide an extra layer of theatre and warmth to the ambiance of the restaurant.
The Menu
Chef David Wyse's cooking is rooted in classic French and Italian provincial cuisine. Serving Lunch, Dinner and weekend Brunch, the quarry menu demonstrates his knowledge and love of local ingredients, which he combines with tradition to create his modern bistro fare. Menus change seasonally to feature dishes in the height of flavour and freshness. All items are made to order, and the kitchen is both flexible and knowledgeable in accommodating special dietary needs and requests.
The Wine & Beverage List
The list of wines and beverages at quarry reflects the owners' passion for quality and excellent value. International wines are carefully chosen for their ability to please the palate as well as the budget. There are twenty wines offered by the glass, encouraging patrons to pair wines to each course and to try something new. The bistro also offers bring-your-own-wine service, with a corkage fee of $15.
